Colin's Baked or Fried Homemade Chicken Goujons

Colin Downes wanted to share his recipe for a home made alternative to that old family favourite, chicken goujons. They taste great and can be eaten as a main meal or snack. They also make a great party starter, for people to share, and dip into tomato ketchup or your own home made dip.

'' Ingredients 4 x Chicken Fillets 1 x Cup of Plain Flour 1 x Cup Instant Potato ¼ x Cup of Corn Flour 4 x Cup of Crushed Cornflakes 1 x Heaped Teaspoon of the following: Cayenne Pepper Chilli Powder Garam Masala Turmeric White Pepper Black Pepper Salt Garlic Salt Jamaican Jerk Seasoning Piri Piri Seasoning Italian Garlic & Herb Seasoning 3 heaped Teaspoon Chilli Flakes 3 x Eggs ½ x Cup Whole Milk 3 x Teaspoons Worcestshire Sauce
Method
Place the Crushed Cornflakes, Jamaican Jerk, Piri Piri , Italian Seasoning, Instant Potato and chilli flakes into a large bowl and sieve the remaining dry ingredients on top and mix well with a fork.
In a separate bowl whisk the eggs, milk and worcesthire sauce.
Slice chicken fillets into 1-1.5 cm thick strips Dip each strip in the wet mix and then in the dry (do this twice for each individual strip to get a crunchier coating.)
Deep fry dipped strips 6-8 at a time @ 180 degrees for 4 mins.
Drain on some kitchen towel to remove excess oil & serve (for a healthier alternative bake the strips for around 20-25 mins in a preheated oven at 200 degrees).''
